Holly gastrobar was opened in summer 2021 by me, beer and wine sommelier Fernanda Befi and my partner, chef Simon Guitard. It is here that we serve a produce-focused cuisine with local influences, inspired by Simon’s roots in French cuisine. All in the laid back setting of our locale in Berlin-Neukölln.
We celebrate ancient cooking techniques alongside an experimental approach to local preparation methods. We use contemporary and traditional preservation methods such as pickling, curing, smoking, sous-vide, lacto-fermentation, ageing, firing, and dehydration as well as DIY experiments by our young kitchen team.
